Is there a way of running zebra keeping the private keys (or part of them, a shard) in a cold storage?
No, zebra currently does not have any functionality to import seeds or keys or sign txs. Ywallet is the only lightwallet that I know of with offline signing functionality.
And that’s really all it takes; a signing key and the tiny bit of functionality to sign a transaction. The ability to broadcast raw transactions exists in a lot of places.

So, what’s the strategy to keep zcash holdings in a z address in cold storage?
You effectively have 2 wallets. One is a view only wallet that is online on your phone, out in the world and you create an unsigned transaction with it.
The offline wallet signs the transaction and then it is broadcast back online.
