By removing the timestamp the information available to a third party almost becomes none (i think) except for transaction fees.

I don’t think Zcash transactions include timestamps. The timestamp you see on mined transactions on a block explorer comes from the block timestamp.
I am looking at an example of a shielded transaction and the timestamp seems to be visible. Is this part of the block timestamp?
